Unlike most distilleries, Chase opt out of buying in a readymade neutral grain spirit. In their quest for traceability in the industry, they use either Chase Original or Naked Chase Vodka as the base to our Williams Gins.
Opening the belly of the 250 litres Carter head style still, Ginny, is add in the raw spirit at 96% along with the same amount of water from the farm. The botanicals are stuffed into a pillow case and placed into the carter head, where the flavours are infused into the vapours passing through. This method provides a very floral style with great length and depth.
Infused juniper buds and berries are added to Chase Vodka for a dry finish, followed by 10 fine botanicals including; cinnamon, nutmeg, ginger, almond, coriander, cardamom, cloves, liquorice and lemon.

This Grapefruit and Pomelo Gin is bursting with flavour. Made with Williams GB gin as the base spirit and infused with a delicate range of eight botanicals including; juniper, orange peel, liquorice, elderflower and bitter almond before distillation in a copper gin still with pink grapefruit and pomelo peels.
From the very first sniff, there is a burst of fragrant grapefruit tartness and classic, robust notes of juniper. This spectacular pairing ignites the senses with the sharp, sweet citrus notes on the nose giving way to grapefruit tartness on the palate. A final big kick of grapefruit peel leaves a deliciously moreish, crisp finish with a teasing tingle on the lips.

50ml Chase Hedgerow Elderflower Gin 4 Slices of Cucumber 15ml Fresh Lemon Juice 10ml Sugar Syrup Soda Top
Method:
Add all ingredients except the soda to a cocktail shaker, muddle ingredients until thoroughly combined. Double strain into a high ball glass filled with cubed ice. Top with soda and garnish with a ribbon of cucumber.
