Vinification:

Maceration lasted for approximately four to five days before the fermentation process began. The wines were pumped over three times per day, in order to break the cap and extract the richest colour possible. The alcoholic fermentation lasted for 17 days, at controlled temperatures of between 27 to 29°C. Only the first must was

used, which then went through a natural malolactic fermentation. The wine was clarified using albumin and was not filtered.

Matured in barrels (45% American oaks, 45% French oak and 10% Hungarian oak) for 15 months.

On 12 January 1980, D.O. Rueda was recognised as the first appellation of origin in the autonomous region of Castilla y León

This wine-making area is situated in the highest part of the northern meseta right in the heart of the Duero high plateau.  It extends across the provinces of Valladolid, Segovia and Ávila. The alluvial, iron-rich soil features very good drainage. It has a continental climate with cold winters and hot summers. These characteristics are ideal for growing native white varieties like Viura, Sauvignon Blanc and, in particular, the Verdejo variety.

Ever since it became the first area in Spain to use stainless steel and cold fermentation equipment, the vine growers of the Penedès have been making excellent modern wines from a mix of native and French grape varieties. The Penedès has been associated for decades with innovative vineyards and wineries.

Ever since it became the first area in Spain to use stainless steel and cold fermentation equipment, the vine growers of the Penedès have been making excellent modern wines from a mix of native and French grape varieties. This has been possible because of the variety of altitudes, lands and micro-climates found in the Penedès which foster the ideal growth of the different grape types.

Vinification:

In the mountainous area of the Upper Penedès the more delicate and aromatic white grape varieties are grown. Moscatel and Gewürtztraminer form the basis for Viña Esmeralda, an exceptionally delicate and strikingly fragrant wine.

Grape Varieties

Gewürztraminer - It has a characteristic primary aroma which attains aromatic splendour following fermentation with a smell of roses, lychees, acacia and jasmine.

Moscatel - Meaty and thick, this grape produces aromatic dry wines and delicious sweet wines.
