Vinification:

Delicate blend of Chardonnay, Pinot Noir, and red wine from Coteaux Champenois (still wine from Champagne). Coteaux Champenois and Champagne Pinot Noir are fermented separately and white grapes in another batch. Then they are blended to create the perfect balance between freshness, richness and fruitiness. Gentle pneumatic pressing. Temperature controlled tanks. Traditional methode champenoise. 36 months in bottle. Ageing on lees for at least 3 years

Winery information:

The Moutard family has been making wine since 1642. Since then they were always keen on exploring the potential of different terroirs, maintaining traditions as well as experimenting with different grapes varieties. Francois Moutard's 21 hectares vineyard are in Buxeuil on the Côte de Bar.



Tasting Note:

Subtle with complexity, the first floral senses blend with the essence of red fresh fruit such as raspberries and wild strawberries evolving towards peppery and spicy aromas. A beautiful Champagne with a distinctive style.

Food Recommendation:

This wine with the stronger backbone of the Coteaux Champenois Pinot Noir, and richerfruity style, is a very food friendly and versatile wine. It can accompany delicate or rustic charcuterie such as Parma ham or paté, light salads, light pasta and rice dishes, especially with seafood, raw and lightly cooked shellfish American and Asian cuisine.
