Vinification:

Left on the vine until thoroughly frozen, these grapes are pressed before they are allowed to thaw, releasing their honey like juice. Residual sugar is 40 Brix.


Winery information:

Pelee Island is Canada's largest independent winery and also the largest estate vineyard covering 600 acres. Nestled in the western basin of Lake Erie, Pelee Island is Canada's Southern most inhabited tip of land. Home to over 10,000 indigenous species, Pelee Island is the environmental pride of Canada. Below the 41st parallel, it is as far south as Mendocino, California, Rome and Madrid and is Canada's warmest region with a growing season over 50 days longer than mainland Canada. No insecticides are used in the vineyards and only a 100% island grown natural fertilizer, sorghum soudan grass, is applied.

Tasting Note:

Icewine is a rare and exquisite product that had its beginnings in Europe nearly two centuries ago. Germany was the first to produce this wine and, as with most new ideas, it occurred by accident. Peasant farmers in Franconia were hit by a sudden, unexpected frost in the winter of 1794. Instead of despairing over the frozen grapes they followed their instinct for frugality and made wine. The result was a small quantity of honey-sweet nectar with a balancing acidity that was unlike anything they had ever produced. Icewines made from Vidal are noted for their affinity with honey flavours in addition to aromas of apricots and peaches. A honey sweet nectar with a balanced acidity.
