Vinification:

Rich Demi Sec is composed of wines taken only from the cuvée (the first, light pressing) and, where appropriate, the taille (second pressing) which provides a higher proportion of essential tannins; the wines from the subsequent pressings are not used. Though 'demi-sec' translates as medium-dry, the style is far from cloying. The blend contains a dosage (final sweetening composed of a wine and cane sugar solution) of 34g/l, though the sweetness is offset by a lively natural acidity. In combination with sweet food and in particular wedding cake, an ideal balance is attained.

A slow cool fermentation with the temperature kept under 18ºC takes place in stainless steel, with each variety and each village kept separate until final blending. The wine undergoes a full malolactic fermentation. Secondary fermentation takes place in bottle at 9ºC in the deepest Pol Roger cellars (33 metres below street level) where the wine is kept until it undergoes remuage (riddling) by hand, a rarity in Champagne nowadays. The very fine and persistent mousse for which Pol Roger is renowned owes much to these deep, cool and damp cellars.

The colour is a dense gold with a fine mousse. The fresh and lively nose expresses a fine, complex register of cloves and roses, developing into hints of breadcrumbs, yeast and citrus fruit. Vineyard note

On the sunny slopes of the Côte des Bar Pinot Noir thrives particularly well on the clay and limestone soils. Vines are pruned during the first fortnight of March using the Guyot method. Vineyards are then ploughed and fertilised during the winter months. Hand harvested.

Soil

This terroir is unique in Champagne and is very similar to the Chablis soil, with Kimerigien chalk and clay which gives pure and mineral characters to the wines.

Viticulture

The vines are pruned during the first fortnight of March using the Royat method. A green harvest or "étulage" takes place at the end of May, to enhance the quality of the grapes. The harvest is by hand.

Vinification:

The grapes undergo a gentle pneumatic pressing, followed by cold settling at 7C. Primary fermentation in temperature controlled tanks between 18-20C. Secondary fermentation in bottle following the traditional Methode Champenoise at 15C. A minimum of 36 months of lees ageing in bottle prior to bottling in April- May.

This terroir is unique in Champagne and is very similar to the Chablis soil, with Kimerigien chalk and clay which gives pure and mineral characters to the wines. Pinot Noir develops beautiful characters on this terroir while the Chardonnays are particularly generous in the microclimates around Troyes and les Riceys area, where Moutard is based.

Viticulture

The vines are pruned during the first fortnight of March using the Royat method. A green harvest or "étulage" takes place at the end of May, to enhance the quality of the grapes. The harvest is by hand.

Vinification:

The grapes undergo a gentle pneumatic pressing, followed by cold settling at 7C. Primary fermentation in temperature controlled tanks between 18-20C. Secondary fermentation in bottle following the traditional Methode Champenoise at 15C. A minimum of 36 months of lees ageing in bottle prior to bottling in April- May.

Conditions of the vintage: the wine year 2006 was the third warmest since 1950, marked in particular by three weeks of heatwave in July. Manual harvest - Traditional Champagne press winemaking: temperature-controlled tanks.
