Winery information:

Château les Hautes Tuileries is the second wine of Château Les Hauts Conseillants. The property was established in 1973 by Paul Figeac and Pierre Bourotte. It is now run by Jean- Baptiste Bourotte, CEO at Audy. The estate is 10 hectares in total split between 5 hectares in the heart of the Lalande de Pomerol and 5 hectares on the Chevrol plateau. Their vines are all over 35 years old with some over 50 years old. Like the wines from neighbouring Pomerol the wines give pride of place to Merlot and show a natural elegance with silky tannins.

Soil

The soils in the vineyards are 6 hecatares of sandy clay with gravel sub-soil. 4 hectares of fine gravel with 10% clay.

Double and single guyot trained vines with 6,000  - 8,000 vines per hectare.

Manual leaf thinning.. Ecofriendly agriculture with no use of chemical fertilizers or pesticides..

Harvest is done by hand

Vinification:

The Berries were Sorted, destemmed and soft pressed before fermentation and maceration in thermo regulated stainless steel vats parcel by parcel.

Maceration lasts about 4-5 weeks with manual pumping over. After maceration and racking a selection of the vats is blended with the collaboration of Jean Philippe Fort from the team of Michel Rolland.

Winery information:

Château de Valois dates back to 1862 when the original vineyards of Château Figeac were restructured. In 1962, Bernard Leydet owned the vineyard comprising eight hectares. Over time, he added to the Pomerol plots and concentrated on improving the quality through improved vineyard management techniques and investment of the cellar. In 1996 Bernard’s son Frédéric Leydet took over, continuing the legacy left by his father and produces truly great Pomerol wines.

Located on the southern slopes of the plateau of the Pomerol appellation, the vines are double Guyot trained.  The vineyard soils are made up of gravel and sand with subsoil of iron pan. The harvest takes place manually.

Vinification:

2013 in Bordeaux was a challenging vintage, resulting in one of the smallest in decades. Cool, wet weather in spring was followed by a warm, sunny summer period. However, damaging hail storms in August resulted in significantly reduced yields. Fortunately good diurnal temperatures throughout September helped to rescue the vintage. A precise focus on the harvest dates coupled with a meticulous selection of the grapes, resulted in lively and aromatic wines.

Fermentation took place in small temperature controlled concrete vats for 28 days.

The wine was matured for 14 months in oak barrels, of which 35% were new, on its fine lees and without any racking.

Domaine de lâ Eglise is the oldest estate on Pomerol famous plateau, first mentioned in the Vieux Papiers du Libournaisin 1589. Originally the property of the church, the estate was secularised in the 18th century. Domaine de l'Eglise lies next to Pomerol's church a stones throw away from Château Petrus. In 1973 the château was acquired by the Castéja family. The round, fruity Domaine de l'Eglise wine has been among the most sought after in Pomerol for many years.

Winery information:

In 1895, Jacques Mondon, a lawyer in Pauillac, acquired several vineyards in the parish of Cissac-Medoc. He combined these different vineyards under the name of Château Cissac. In 1940 Louis Vialard inherited the property from his grandparents Mondon and he set about the task of restoring the vineyards and th outbuildings as well as the family home. Louis who is largely responsible for the excellent reputation of the Chateau died in 2009. He is succeeded by his daughter Danielle and grandaughter Marie. " The château is of a particular architectural style, 'Chartreuse' of the 18th century and is probably on the site of a Roman Villa.

The vines of Château Cissac are situated on a a plateau with a soil composed of gravel deposits from the Garonne river from the Bunz-Mindel period. It is located at an altitude of 27.5 m, eqivalent to the highest points of the neighbouring appellations, Saint Estèphe and Pauillac.

The soils in the vineyards are of fine gravel over chalk.

The tillage of the soil and planting of grass cover, with integrated pest management throughout the vineyard,

complement environmental management with leaf thinning mechanically and manually in part of the vineyard.

Vinification:

Fermented in stainless steel tanks at between 28º - 30ºC lasting for an average of 5 weeks.

Aged for 14 to 16 months in oak casks of which 30% is new wood

Winery information:

The history of Château Léoville Barton began in 1722, when Irishman Thomas Barton moved from Ireland to the Bordeaux region, where he established a successful trading company. His grandson bought Château Langoa and part of the Léoville estate in 1826. Current owner Anthony Barton lives in the beautiful 18th century Château Langoa and makes two wines, Château Léoville Barton and Château Langoa-Barton. He now owns 51 hectares of vineyard at Chateau Léoville-Barton which lie close to the Gironde, sandwiched between the water and Chateau Talbot.

They have a typical St Julien terroir of gravelly soils over deep clay. Plantings are are 74% Cabernet Sauvignon with the remainder being 23% Merlot and 3% Cabernet Franc, reflecting the classic, Cabernet-dominated wine produced in the region.

Vinification:

The vines are trained according to the Double Guyot method, with high density planting. The average age of the vines is 40 years, producing an average yield of 42 hectolitres per hectare. The soil is gravel of varying depths on top of a clay sub-soil.

Traditional ploughing and pruning takes place, however weed killers are not used and there is a limited use of fertilisers.

Fermentation lasted approximately five days during which time the juice was pumped over twice daily. The wine was left on the skins for approximately two weeks dependent on the quality of the crop. The wine was then drawn off and the skins pressed to obtain the pressed wine, an important component in the final blend. The malolactic fermentation took place in the vats, after which the wine was aged in oak barrels for 12 months prior to bottling.

The Castéja family, who also own Château Batailley and Château Trotte Vieille, bought the château in 1955. The château has nearly 100 hectares of vines with an average age of 35 years. Beau- Site's 18th century underground cellar is one of the oldest in the Médoc and presents the perfect maturing conditions for a wine that is vinified with the same care and technique as a Grand Cru Classé. Beau-Sites wine is full of power and temperament, a typical Saint-Estèphe with tannins allowing for stocking this wine for some years."

The history of Château Suduiraut, in Sauternes, goes back centuries. After the total destruction of the property by the Duke d'Epernon in the 1600's, Count Blaise de Suduiraut replanted the vineyard and restored the estate to its former glory. Vinification:

The commune of St-Etienne de Lisse lies 8 kilometres west of St-Emilion. Xavier Minvieille grows 9 hectares of vines on three different terroirs. Each plot is vinified separately to preserve their distinct characteristics. The majority of the vines are Merlot, with approximately 30% Cabernet Franc. They also have a small quantity of Malbec. Vines are replanted regularly to ensure a continuous supply of old vines for the future.

Vinification:

Each parcel of grapes is picked and vinified separately. The estate use two press wines which are again vinified separately in temperature controlled vats. A larger proportion of the pressed wine goes towards the Grand Vin. The wine is aged in oak barriques for 10 months to give elegance and complexity.

Purchased in 1996, Château Boutisse is owned by winemaker and oenologist Xavier Milhade. It is located in the commune of Saint Christophe des Bardes, one of the top communes in AC St- Emilion. It is a relatively large estate for St- Emilion with 23 hectares, mainly planted with Merlot. Huge investments have been poured into the vineyards since 1996 with several parcels of vines being completely replanted. Château Boutisse possesses excellent terroir; when the soil was ripped and prepared for planting, large chunks of the limestone were visible under the chalky clay topsoil. The majority of vines have excellent southern exposure.

Vinification:

The soil in the vineyards is chalky clay topsoil over limestone sub-soil.

The vines are trained on the Double Guyot system and grafted to Amercian rootstock. Bunch thinning tis applied to keep only the best bunches.

The must is cold soak followed by traditional vinification in small temperature controlled stainless steel tanks. With short and regular pumping over.

Fermentation of 25% of the wine occurs in 500 litre oak barrels and malolactic fermentation in barrel.

Fining is carried out using egg white and aged in oak for a minimum of 12 months of which 40% is new oak.
